Chilled Avocado Soup

      GRANNY SAYS: Myself, I'm mad for avocados, so think of me when you whip up this creamy, no-cook soup on a sultry summer night!

     

2 ripe avocados 3/4 cup buttermilk
1/2 cup unflavored yogurt 1 tbsp. fresh lime juice
1-1/2 tbsp. chopped seeded jalapeño chili
1/2 tsp. chili powder 1/2 cup chicken broth
2 tbsp. chopped red onion Salt and pepper to taste
  • Cut the avocados in half and remove pits.
  • Scrape out the avocado meat and puree in a blender with buttermilk and yogurt until smooth.
  • Stir in lime juice, jalapeño, and chili powder.
  • Add broth while blender is running. Chill until cold and serve garnished with chopped onion.
