Chilled Avocado Soup
GRANNY SAYS: Myself, I'm
mad for avocados, so think of me when you whip up this creamy, no-cook soup on a sultry summer night!
| 2 ripe avocados |
3/4 cup buttermilk |
| 1/2 cup unflavored yogurt |
1 tbsp. fresh lime juice |
| 1-1/2 tbsp. chopped |
seeded jalapeño chili |
| 1/2 tsp. chili powder |
1/2 cup chicken broth |
| 2 tbsp. chopped red onion |
Salt and pepper to taste |
- Cut the avocados in half and remove pits.
- Scrape out the avocado meat and puree in a blender with buttermilk
and yogurt until smooth.
- Stir in lime juice, jalapeño, and chili powder.
- Add broth while blender is running. Chill until cold and serve
garnished with chopped onion.
