Pumpkin Soup With Ginger
GRANNY SAYS: When your
ghosts and goblins come in chilled after a hard night of Trick-or-Treat, treat them to a bowl of nourishing
pumpkin soup. The good yellow vegetables will go a long way toward
balancing all that candy!
| 3 green onions, sliced |
2 tbsp. butter |
| 2 cups pureed pumpkin |
1 tbsp. flour |
| 1/2 tsp. ground ginger |
1/8 tsp turmeric |
| 2 cups skim milk |
1 quart chicken broth |
| 2 tbsp. chopped fresh parsley |
Black pepper to taste |
- Blend the flour and spices with 1/3 cup of milk until smooth.
- Sauté the onions in butter until clear.
- Stir in pumpkin, flour mixture and stir until very warm.
- Add remaining milk and cook, stirring constantly, for 5 to 10
minutes until soup thickens. Do not allow the mixture to boil!
- Add broth and heat almost to boiling.
- Serve it hot, garnished with chopped parsley.
