Pumpkin Soup With Ginger

      GRANNY SAYS: When your ghosts and goblins come in chilled after a hard night of Trick-or-Treat, treat them to a bowl of nourishing pumpkin soup. The good yellow vegetables will go a long way toward balancing all that candy!

     

3 green onions, sliced 2 tbsp. butter
2 cups pureed pumpkin 1 tbsp. flour
1/2 tsp. ground ginger 1/8 tsp turmeric
2 cups skim milk 1 quart chicken broth
2 tbsp. chopped fresh parsley Black pepper to taste
  • Blend the flour and spices with 1/3 cup of milk until smooth.
  • Sauté the onions in butter until clear.
  • Stir in pumpkin, flour mixture and stir until very warm.
  • Add remaining milk and cook, stirring constantly, for 5 to 10 minutes until soup thickens. Do not allow the mixture to boil!
  • Add broth and heat almost to boiling.
  • Serve it hot, garnished with chopped parsley.
