Creamy Cheddar And Potato Soup

      GRANNY SAYS: This is a great contrast to some of the spicier soups. It has a luscious texture and flavor, and it's rich enough to be almost a meal in itself!

     

1/4 cup butter 1/2 cup chopped onion
2 tbsp. flour 2 cups milk
2 cups chicken broth 1/2 cup water
2 large potatoes 1 cup grated sharp cheese
Chopped green onions Salt and pepper to taste
  • Peel and dice the potatoes.
  • Simmer in broth and water until potatoes are soft.
  • Cool slightly and process the entire mixture in blender until smooth.
  • In a heavy saucepan, sauté the onions in butter over medium heat for about 5 minutes, stirring constantly.
  • Stir in flour a little at a time, and continue to cook (and stir) for about 3 minutes.
  • Reduce heat to medium low, add broth-potato mixture and gradually mix in milk and cheese.
  • Stir, stir, stir until soup is smooth and cheese is melted.
  • Season, garnish with green onions, and serve hot. Serves 6-8.
