Creamy Cheddar And Potato Soup
GRANNY SAYS: This is
a great contrast to some of the spicier soups. It has a luscious texture and flavor, and it's rich enough to be
almost a meal in itself!
| 1/4 cup butter |
1/2 cup chopped onion |
| 2 tbsp. flour |
2 cups milk |
| 2 cups chicken broth |
1/2 cup water |
| 2 large potatoes |
1 cup grated sharp cheese |
| Chopped green onions |
Salt and pepper to taste |
- Peel and dice the potatoes.
- Simmer in broth and water until potatoes are soft.
- Cool slightly and process the entire mixture in blender until
smooth.
- In a heavy saucepan, sauté the onions in butter over
medium heat for about 5 minutes, stirring constantly.
- Stir in flour a little at a time, and continue to cook (and stir)
for about 3 minutes.
- Reduce heat to medium low, add broth-potato mixture and
gradually mix in milk and cheese.
- Stir, stir, stir until soup is smooth and cheese is melted.
- Season, garnish with green onions, and serve hot. Serves 6-8.
