Summertime Lime Salsa
GRANNY SAYS: There are
plenty of commercial salsas now, but nothing beats home-made! Try it my way, and tell them it's your Granny's
secret recipe. Inovate adjust the garlic
until it's exactly the way you like it, add extra jalapeños
or cut back either way, it's all yours!
Salsa'a versitile. Serve it with chips for an appetizer, ladle it
over enchiladas, or slather it on scrambled eggs. Spread
it on a flour tortilla with some cheese, microwave for 60 seconds
and hot dog! it's snack time!
| 1 large clove garlic |
6 jalapeño peppers |
| 2-1/2 cups diced plum tomatoes |
1/2 cup minced onion |
| 1/4 cup diced green pepper |
2 tbsp. chopped parsley |
| 2 tbsp. chopped cilantro |
Juice of 1 lime |
| 1/2 tsp salt |

| 1/2 cup diced tomatillos (about 4) |
|
- Remove seeds from jalapeños.
- In a blender or food processor, combine garlic, jalapeños,
and tomatoes, and process until smooth.
- Blend in tomatillos, onions, green peppers, salt, and lime juice.
- Combine in a serving dish with chopped parsley and cilantro.
- Chill overnight before serving. Makes 3-1/2 cups
Granny also says: For more bite, add more jalapeños and a dash
of cumin.
