Summertime Lime Salsa

      GRANNY SAYS: There are plenty of commercial salsas now, but nothing beats home-made! Try it my way, and tell them it's your Granny's secret recipe. Inovate — adjust the garlic until it's exactly the way you like it, add extra jalapeños or cut back — either way, it's all yours!

      Salsa'a versitile. Serve it with chips for an appetizer, ladle it over enchiladas, or slather it on scrambled eggs. Spread it on a flour tortilla with some cheese, microwave for 60 seconds and — hot dog! — it's snack time!

     

1 large clove garlic 6 jalapeño peppers
2-1/2 cups diced plum tomatoes 1/2 cup minced onion
1/4 cup diced green pepper 2 tbsp. chopped parsley
2 tbsp. chopped cilantro Juice of 1 lime
1/2 tsp salt  
1/2 cup diced tomatillos (about 4)  
  • Remove seeds from jalapeños.
  • In a blender or food processor, combine garlic, jalapeños, and tomatoes, and process until smooth.
  • Blend in tomatillos, onions, green peppers, salt, and lime juice.
  • Combine in a serving dish with chopped parsley and cilantro.
  • Chill overnight before serving. Makes 3-1/2 cups

      Granny also says: For more bite, add more jalapeños and a dash of cumin.
