Tart Cranberry Relish
GRANNY SAYS: There is
something special about this relish recipe. Not only does it go great on hot dogs and hamburgers, but for something
extra nice, try mixing cranberry relish and salsa together. Now that's
good!
| 1/4 cup honey |
1-1/2 cups fresh orange juice |
| 1/2 cup golden raisins |
1/2 cup dark raisins |
| 2 tsp orange zest |
2 tbsp. red wine vinegar |
| 1 cup dried apples, coarsely chopped |
1/8 cup fresh ginger, very finely diced |
| 3 cups fresh cranberries (about 1 lb) |

- Combine all ingredients, except vinegar, in a large
non-aluminum pan.
- Bring pot to a boil, stirring frequently.
- Reduce heat, cover and simmer, stirring occasionally, until the
cranberries burst and the mixture thickens slightly (about 10 minutes).
- Remove from heat and stir in vinegar.
- When slightly cooled, spoon into clean, hot containers and
refrigerate.
- Will keep up to 10 days in refrigerator. Makes 4 cups.
