Chinese Sweet-and-sour Sauce

      GRANNY SAYS: Quick to make, this excellent sauce turns your ordinary dull meal into a sweet-and-sour dish. Served with rice and stir-fried vegetables, it can make a small amount of meat (cut in very small pieces) go a long way.

     

2 tsp. cornstarch 1-1/2 cup chicken broth
2 tbsp. soy sauce 1 tbsp. butter
1 cup diced green peppers 1 cup sliced carrots
1/2 cup white vinegar 3/4 cup pineapple juice
1/2 cup sugar 1/4 tsp. ginger
6 slices diced, canned pineapple  
  • Make a paste of the soy sauce, cornstarch, and 1/2 cup of broth and set aside.
  • In a large pan, melt the butter and stir-fry peppers for about 1 minute, then add pineapple and the remaining broth and simmer for 4-5 minutes.
  • Add cornstarch paste and the rest of the ingredients and simmer, stirring constantly, until the mixture thickens.
