Chinese Sweet-and-sour Sauce
GRANNY SAYS: Quick to
make, this excellent sauce turns your ordinary dull meal into a sweet-and-sour dish. Served with rice and stir-fried
vegetables, it can make a small amount of meat (cut in very small
pieces) go a long way.
| 2 tsp. cornstarch |
1-1/2 cup chicken broth |
| 2 tbsp. soy sauce |
1 tbsp. butter |
| 1 cup diced green peppers |
1 cup sliced carrots |
| 1/2 cup white vinegar |
3/4 cup pineapple juice |
| 1/2 cup sugar |
1/4 tsp. ginger |
| 6 slices diced, canned pineapple |

- Make a paste of the soy sauce, cornstarch, and 1/2 cup of
broth and set aside.
- In a large pan, melt the butter and stir-fry peppers for about
1 minute, then add pineapple and the remaining broth and simmer for
4-5 minutes.
- Add cornstarch paste and the rest of the ingredients and simmer,
stirring constantly, until the mixture thickens.
