Pear And Pineapple Jam

      GRANNY SAYS: Why aren't you making your own jam? Sure, you can pick up a bottle at the store, but why do that when this is so easy — and so much better. Besides, there really is something special about a fresh jam, and this is the only way to get it REALLY fresh!

     

4 cups sugar 1 tsp. minced lemon peel
4 large ripe pears, cored and peeled 1/3 cup lemon juice
1/2 medium pineapple, cored and peeled  
  • Cut up pineapple into small pieces and chop in food processor.
  • Strain the resulting juice into a large nonaluminum pan, reserving pineapple pulp.
  • Cut up pears into 1-inch cubes and add to pineapple juice.
  • Stirring occasionally, simmer over medium-low heat until pears are
  • tender (about 10 minutes).
  • Add pineapple, sugar, lemon peel, and lemon juice.
  • Reduce heat to low and simmer until mixture drops thickly from a spoon, stirring often (takes about 1 hour).
  • Cool and then chill.
  • Keeps about 1 week. Makes about 5 cups.
