RECIPE 20
Pear And Pineapple Jam
GRANNY SAYS: Why aren't
you making your own jam? Sure, you can pick up a bottle at the store, but why do that when
this is so easy and so much better. Besides, there really is
something special about a fresh jam, and this is the only way to
get it REALLY fresh!
| 4 cups sugar |
1 tsp. minced lemon peel |
| 4 large ripe pears, cored and peeled |
1/3 cup lemon juice |
| 1/2 medium pineapple, cored and peeled |
|
- Cut up pineapple into small pieces and chop in food processor.
- Strain the resulting juice into a large nonaluminum pan,
reserving pineapple pulp.
- Cut up pears into 1-inch cubes and add to pineapple juice.
- Stirring occasionally, simmer over medium-low heat until pears are
- tender (about 10 minutes).
- Add pineapple, sugar, lemon peel, and lemon juice.
- Reduce heat to low and simmer until mixture drops thickly from a
spoon, stirring often (takes about 1 hour).
- Cool and then chill.
- Keeps about 1 week. Makes about 5 cups.
