Ginger Beef With Asparagus
GRANNY SAYS: This is
steak for real steak-lovers! With soy sauce and garlic to enhance its flavor, asparagus for elegance, and ginger
to make it interesting! This is a delicious dinner for guests
but it's so good your family will want it every night!
| 3/4 lb. lean sirloin steak |
1/2 cup cooking sherry |
| 2 tbsp. soy sauce |
1 tbsp. minced fresh ginger |
| 1 clove garlic, minced |
1 tsp grated lemon rind |
| 1 tbsp. sesame oil |
1 lb. fresh asparagus |
| 1 cup julienne carrots |
1 cup cut-up celery |
| 1 cup diced red bell pepper |
1 onion, minced |
| 2 tsp. cornstarch |
Cooked rice |
- Slice steak very thin.
- Marinate 2-4 hours in mixture of sherry, soy sauce, ginger, garlic,
and lemon rind.
- Stir-fry asparagus with other vegetables in sesame oil for 3-5
minutes.
- Remove vegetables from skillet and sauté steak 2-3 minutes.
- Stir cornstarch into reserved marinade, add with vegetables to
steak and sauté until vegetables are hot and sauce thickens
slightly.
- Serve over rice.
