Steak With Mustard Sauce

      GRANNY SAYS: The creamy, pungent sauce on this dish will make your appetite wake up and take notice! It's a great meal for Sunday's lunch or supper.

     

1 tbsp. butter 1/4 cup minced shallots
2 tbsp. minced garlic 1/2 cup dry white wine
2 tbsp. Dijon mustard 1 cup whipping cream
2/3 cup beef broth 2 tbsp. cracked peppercorns
1 tbsp. olive oil 1/4 cup fresh parsley
Two 12-ounce sirloin steaks, about 1 inch thick, well-trimmed  
  • Melt butter in heavy saucepan over medium heat.
  • Add shallots and garlic and sauté about 3 minutes.
  • Add wine, increase heat to high and boil until liquid is reduced to about 1/4.
  • Whisk in mustard, cream and broth and reduce again to about 1-1/4 cups.
  • Marinate steak in sauce for about 1 hour.
  • Coat steak with pepper and grill until done as desired.
  • Meanwhile, simmer sauce about 1-1/2 minutes, or until very hot.
  • Serve steak in sauce, garnished with parsley.
