Basic Brown Sauce For Meat
GRANNY SAYS: Any time
you need a great all-purpose sauce for beef dishes, here it is. (You're right. It's simply a good old brown
gravy.) Create variations by substituting cider, sherry, or red
wine for the stock. Add mushrooms, capers, sauteed onions, and
a variety of similar items that's all it takes to have
something different every night!
| 2 tbsp. butter |
3 tbsp. flour |
| 1 cup beef stock |

- Brown the flour on a baking sheet in a hot oven, being careful
not to scorch it.
- Melt the butter in a small frying pan and add the flour
very slowly and a little at a time.
- Cook very gently, stirring constantly, until the mixture begins to
firm.
- Then begin adding stock a little at a time, continuing to stir,
and simmer until hot.
- Serve promptly over meat.
