Basic Brown Sauce For Meat

      GRANNY SAYS: Any time you need a great all-purpose sauce for beef dishes, here it is. (You're right. It's simply a good old brown gravy.) Create variations by substituting cider, sherry, or red wine for the stock. Add mushrooms, capers, sauteed onions, and a variety of similar items — that's all it takes to have something different every night!

     

2 tbsp. butter 3 tbsp. flour
1 cup beef stock  
  • Brown the flour on a baking sheet in a hot oven, being careful not to scorch it.
  • Melt the butter in a small frying pan and add the flour very slowly and a little at a time.
  • Cook very gently, stirring constantly, until the mixture begins to firm.
  • Then begin adding stock a little at a time, continuing to stir, and simmer until hot.
  • Serve promptly over meat.
