Meatballs Parmesan

      GRANNY SAYS: Ready for something Italian? This easy-to-make recipe pleases everyone! Party time? Serve this from a chafing dish!

     

4 large eggs 1/2 cup fresh breadcrumbs
3 tbsp. olive oil 1/4 cup chopped parsley
1 garlic clove, minced 2 lbs. lean ground beef
Hot cooked noodles Salt and pepper to taste
6 tbsp. grated Parmesan cheese  
  • In a large bowl, combine eggs, breadcrumbs, Parmesan cheese, 2 tbsp. olive oil, parsley, garlic, salt, and pepper and stir well.
  • Add ground beef, mix well, and form into 1-1/2-inch meatballs. (Makes about 40).
  • Coat the bottom of a heavy skillet with remaining olive oil and sauté meatballs, about 15 minutes, turning often, until well browned and cooked through.
  • Serve hot over noodles, or with a box of big wooden toothpicks!
