Steak With Capers
GRANNY SAYS: A great
steak that's not hard to prepare, and personally I do like capers in a sauce the more the better. (But if you
add them with too liberal a hand you'll find them extremely salty!)
| 2 nice large steaks |
3 tbsp. chopped thyme |
| Fresh black pepper to taste |
2 tbsp. dry cooking sherry |
| 1/4 cup virgin olive oil |
2 to 3 tbsp. capers |
| 2 tbsp. chopped parsley |
2 tbsp. chopped green onions |
- Rub the steaks with sherry and a small amount of olive oil,
- Roll in thyme and pepper.
- Cover and chill in refrigerator for 2-3 hours.
- Sauté capers, parsley, and green onions in remaining olive
oil and set aside.
- Brown the marinated steaks for 2-3 minutes in the same pan,
then grill or broil steaks until done
- Serve hot, covered with caper mixture.
