RECIPE 33

Steak With Capers

      GRANNY SAYS: A great steak that's not hard to prepare, and personally I do like capers in a sauce — the more the better. (But if you add them with too liberal a hand you'll find them extremely salty!)

     

2 nice large steaks 3 tbsp. chopped thyme
Fresh black pepper to taste 2 tbsp. dry cooking sherry
1/4 cup virgin olive oil 2 to 3 tbsp. capers
2 tbsp. chopped parsley 2 tbsp. chopped green onions
  • Rub the steaks with sherry and a small amount of olive oil,
  • Roll in thyme and pepper.
  • Cover and chill in refrigerator for 2-3 hours.
  • Sauté capers, parsley, and green onions in remaining olive oil and set aside.
  • Brown the marinated steaks for 2-3 minutes in the same pan, then grill or broil steaks until done
  • Serve hot, covered with caper mixture.
