Chicken With Lemon And Oregano Sauce
GRANNY SAYS: This succulent
chicken's creamy, tangy, and slightly spicy sauce will make your mouth water. Lemon has the added benefit
of tenderizing the meat as well as enhancing its flavor.
| 2 medium lemons |
4 tbsp. chopped parsley |
| 1 tsp. oregano |
1/2 tsp. black pepper |
| 1/2 tsp. cayenne pepper |
1 large garlic clove |
| 1/2 tsp. salt |
4 chicken breasts |
| 2 tbsp. olive oil |
1 cup plain yogurt |
- Slice 1 lemon and set aside.
- Grate 2 tbsp. of peel from the other lemon, then squeeze to make
about 2 tsp of juice.
- Mince garlic and combine with grated lemon peel, oregano,
black pepper, cayenne pepper, salt, and 2 tbsp. parsley.
- Loosen skin from chicken breasts and insert garlic mixture under
chicken skin.
- Rub the chicken with oil and broil over medium high heat until
done. (About 12 minutes each side.)
- Serve chicken garnished with lemon slices and a sauce of yogurt
mixed with lemon juice and remaining parsley.
