Chicken With Lemon And Oregano Sauce

      GRANNY SAYS: This succulent chicken's creamy, tangy, and slightly spicy sauce will make your mouth water. Lemon has the added benefit of tenderizing the meat as well as enhancing its flavor.

     

2 medium lemons 4 tbsp. chopped parsley
1 tsp. oregano 1/2 tsp. black pepper
1/2 tsp. cayenne pepper 1 large garlic clove
1/2 tsp. salt 4 chicken breasts
2 tbsp. olive oil 1 cup plain yogurt
  • Slice 1 lemon and set aside.
  • Grate 2 tbsp. of peel from the other lemon, then squeeze to make about 2 tsp of juice.
  • Mince garlic and combine with grated lemon peel, oregano, black pepper, cayenne pepper, salt, and 2 tbsp. parsley.
  • Loosen skin from chicken breasts and insert garlic mixture under chicken skin.
  • Rub the chicken with oil and broil over medium high heat until done. (About 12 minutes each side.)
  • Serve chicken garnished with lemon slices and a sauce of yogurt mixed with lemon juice and remaining parsley.
