Chicken In Mild Red Sauce
GRANNY SAYS: Here's a
good chicken dish to serve on a cold day. The sauce is probably different from other red sauces in your
repertoire; chili, honey, and lime may seem an unusual combination,
but just try it!
| 3/4 cup fresh lime juice |
3/4 cup white cooking wine |
| 6 tbsp. olive oil |
4 tbsp. red chili powder |
| 2 garlic cloves, chopped |
1 small onion, chopped |
| 2 tbsp. soy sauce |
2 tbsp. honey |
| 1-1/2 tsp. oregano |
8 boneless chicken breasts |
- Pound chicken breasts to about 1/2-inch thickness.
- Chill and marinate chicken overnight in a puree made from other
ingredients.
- Drain off marinade and simmer 5-7 minutes (keep hot).
- Broil chicken about 5 minutes each side, until thoroughly done,
cover with marinade and serve hot.
