Chicken In Mild Red Sauce

      GRANNY SAYS: Here's a good chicken dish to serve on a cold day. The sauce is probably different from other red sauces in your repertoire; chili, honey, and lime may seem an unusual combination, but just try it!

     

3/4 cup fresh lime juice 3/4 cup white cooking wine
6 tbsp. olive oil 4 tbsp. red chili powder
2 garlic cloves, chopped 1 small onion, chopped
2 tbsp. soy sauce 2 tbsp. honey
1-1/2 tsp. oregano 8 boneless chicken breasts
  • Pound chicken breasts to about 1/2-inch thickness.
  • Chill and marinate chicken overnight in a puree made from other ingredients.
  • Drain off marinade and simmer 5-7 minutes (keep hot).
  • Broil chicken about 5 minutes each side, until thoroughly done, cover with marinade and serve hot.
