Glazed Orange Chicken
GRANNY SAYS: Not only
does this dish taste great, but it looks great too. It's convenient to serve at a dinner party, because most of the
mixing and stirring is done ahead of time. The chicken is in the oven
when guests arrive, and it requires only a minute or two in the
kitchen before serving time.
| 4 chicken breast halves |
Salt and pepper to taste |
| 1 cup orange juice |
3 tbsp. brown sugar |
| 3 tbsp. soy sauce |
2 tsp. ground ginger |
| 1 garlic clove, minced |
Cooked rice |
| 1 tbsp. cornstarch, dissolved in 3 tbsp. water |

- Combine juice, sugar, soy, garlic, and ginger and stir until the
sugar dissolves.
- Place chicken, skin side up, in a medium baking pan and season
with salt and pepper.
- Pour juice mixture over chicken and bake 35 minutes in a
350-degree oven.
- After chicken cooks, remove pan juices and stir in cornstarch
mixture.
- Bring to a boil over high heat, stirring constantly.
- Coat chicken with glaze and bake about another 10 minutes at 450
degrees.
- Serve with hot rice or other garnishes.
