Herbal Cheese Chicken
GRANNY SAYS: Oh, this
is so rich and soooo good! Be sure you have plenty of rice on hand because wonderful as the chicken is, you
won't want to waste even the last dab of sauce. Thus the extra rice.
(In the unlikely event that there ever is any leftover chicken,
it's worth noting that this reheats extremely well,)
| 12 oz. cream cheese |
1/4 stick butter |
| 2-1/2 tbsp. whipping cream |
1 clove garlic |
| 1/4 tsp. marjoram |
1/4 tsp. dillweed |
| 1/4 tsp. basil |
1/4 tsp. thyme |
| 1/4 tsp. oregano |
1/4 tsp. ground black pepper |
| Paprika |
Hot, cooked rice |
| 6 boned, skinned chicken breasts |

- Mince and crush garlic.
- Cream together softened cheese, butter, cream, and herbs until the
mixture is smooth.
- Cover and chill for about an hour.
- Rinse and dry the chicken breasts, then pound them to flatten to
about 1/4 inch thick.
- Place 2 heaping tablespoons of cheese mixture in the center of
each chicken breast, roll up and secure with one or more toothpicks.
- Bake in a glass baking dish at 360 degrees for about 30 minutes or
until chicken is thoroughly cooked. (Baste with melted cheese sauce at
least once during baking.)
- Dust each chicken breast with paprika for color and serve with
hot, cooked rice.
