Honey-lime Chicken With Mustard Sauce

      GRANNY SAYS: Spicy chicken is cool even in mid-summer. This is a good dish for casual and more formal dinners. The lime, honey, mustard, and pepper really work for you to create an exceptional meal!

     

6 tbsp. honey 4 tbsp. lime juice
3 tbsp. Dijon mustard 2 tbsp. butter
1/2 cup fresh snow peas 1 red bell pepper
1-1/2 cups hot cooked rice Salt to taste
6 boneless, skinless chicken breasts  
  • Pound chicken breasts to about 1/2 inch thickness.
  • Combine mustard and lime juice with 4 tbsp. of honey and marinate chicken for at least 1 hour.
  • Slice bell pepper into thin strips.
  • Reserve marinade and sauté chicken in butter for 10-15 minutes or until chicken is done through.
  • Add peppers, snow peas, and marinade and simmer for 2-3 minutes until very hot.
  • Serve over rice.
