Honey-lime Chicken With Mustard Sauce
GRANNY SAYS: Spicy chicken
is cool even in mid-summer. This is a good dish for casual and more formal dinners. The lime, honey,
mustard, and pepper really work for you to create an exceptional
meal!
| 6 tbsp. honey |
4 tbsp. lime juice |
| 3 tbsp. Dijon mustard |
2 tbsp. butter |
| 1/2 cup fresh snow peas |
1 red bell pepper |
| 1-1/2 cups hot cooked rice |
Salt to taste |
| 6 boneless, skinless chicken breasts |

- Pound chicken breasts to about 1/2 inch thickness.
- Combine mustard and lime juice with 4 tbsp. of honey and
marinate chicken for at least 1 hour.
- Slice bell pepper into thin strips.
- Reserve marinade and sauté chicken in butter for 10-15
minutes or until chicken is done through.
- Add peppers, snow peas, and marinade and simmer for 2-3 minutes
until very hot.
- Serve over rice.
