Sweet And Sour Chicken
GRANNY SAYS: Oh boy,
sweet-and-sour! This is just stir-fried chicken and vegetables plus a very basic sauce. So it's easy to make, but
always a crowd-pleaser!
| 1/2 cup pineapple juice |
2 tbsp. brown sugar |
| 1 tsp. soy sauce |
1/2 tsp. pepper |
| 1/4 cup mild vinegar |
4 tbsp. oil |
| 2 chicken breasts |
1 red bell pepper |
| 1 green bell pepper |
5-6 green onions |
| Hot cooked rice |

- In a small saucepan, combine pineapple juice, brown sugar,
soy sauce, pepper, and vinegar with 2 tbsp. oil.
- Simmer about 5 minutes.
- Meanwhile, cut up chicken, peppers, and onions into bite-size pieces.
- Stir-fry chicken quickly in remaining oil, adding vegetables when
chicken is almost done.
- Add sauce and serve over hot rice.
