Sweet And Sour Chicken

      GRANNY SAYS: Oh boy, sweet-and-sour! This is just stir-fried chicken and vegetables plus a very basic sauce. So it's easy to make, but always a crowd-pleaser!

     

1/2 cup pineapple juice 2 tbsp. brown sugar
1 tsp. soy sauce 1/2 tsp. pepper
1/4 cup mild vinegar 4 tbsp. oil
2 chicken breasts 1 red bell pepper
1 green bell pepper 5-6 green onions
Hot cooked rice  
  • In a small saucepan, combine pineapple juice, brown sugar, soy sauce, pepper, and vinegar with 2 tbsp. oil.
  • Simmer about 5 minutes.
  • Meanwhile, cut up chicken, peppers, and onions into bite-size pieces.
  • Stir-fry chicken quickly in remaining oil, adding vegetables when chicken is almost done.
  • Add sauce and serve over hot rice.
