Spicy Jambalaya

      GRANNY SAYS: This is another of our family favorites. Are you beginning to notice that we sort of go for hot stuff?

     

6 chicken breasts 1/4 cup olive oil
1/3 cup minced onion 1/2 cup peeled chopped tomato
1 green pepper, diced 1/2 cup diced celery
1 cup rice 1 1/2 cups boiling water
1 bay leaf 1/4 tsp. thyme
1/4 cup chopped parsley 1 slice cooked bacon, crumbled
Salt, pepper, and Tabasco sauce, to taste  
  • Sauté chicken breasts in olive oil for about 5 minutes and remove from pan.
  • Sauté onion and tomato for 3 minutes.
  • Stir in rice, pepper, and celery
  • Continue cooking for about one minute, then add water with bay leaf, thyme and parsley.
  • Simmer until chicken is tender and rice is almost done.
  • Stir in salt, pepper and Tabasco to taste.
  • Place in casserole and heat in 350-degree oven for 5-10 minutes until rice is done.
  • Garnish with bacon and serve hot.
