RECIPE 45
Spicy Jambalaya
GRANNY SAYS: This is
another of our family favorites. Are you beginning to notice that we sort of go for hot stuff?
| 6 chicken breasts |
1/4 cup olive oil |
| 1/3 cup minced onion |
1/2 cup peeled chopped tomato |
| 1 green pepper, diced |
1/2 cup diced celery |
| 1 cup rice |
1 1/2 cups boiling water |
| 1 bay leaf |
1/4 tsp. thyme |
| 1/4 cup chopped parsley |
1 slice cooked bacon, crumbled |
| Salt, pepper, and Tabasco sauce, to taste |

- Sauté chicken breasts in olive oil for about 5 minutes and
remove from pan.
- Sauté onion and tomato for 3 minutes.
- Stir in rice, pepper, and celery
- Continue cooking for about one minute, then add water with bay
leaf, thyme and parsley.
- Simmer until chicken is tender and rice is almost done.
- Stir in salt, pepper and Tabasco to taste.
- Place in casserole and heat in 350-degree oven for 5-10 minutes
until rice is done.
- Garnish with bacon and serve hot.
