Grilled Salmon With Citrus And Olive Relish
GRANNY SAYS: This very
elegant salmon is fine fare even for those who don't normally choose sea food. Although it's beautiful to look
at, it's not just a "ladies luncheon" dish. Try it!
| 2 oranges |
1-2 grapefruit |
| 1 lemon |
1/4 cup capers |
| 1 cup of green pimento olives |
1/4 cup chopped green onions |
| 3 tbsp. olive oil |
2 tsp. minced, crushed garlic |
| 1 red bell pepper sliced thin |
Six 6-oz skinless salmon fillets |
| Salt and pepper to taste |
3 cups hot cooked rice |
- Grate 1 tsp. each orange and lemon peels.
- Peel fruit, remove white pith and membranes, and cut up.
- Drain olives and slice into rounds.
- Combine with fruit, grated peel, capers, onions, garlic, and
2-1/2 tbsp. oil.
- Season with salt and pepper, cover, and refrigerate for at least
30 minutes.
- Brush salmon with remaining oil and grill until cooked through
(about 4 minutes per side).
- Cover with relish and serve hot, with hot rice.
