Patti's Salmon Croquettes
GRANNY SAYS: I personally
had to persuade Patti to reveal this recipe; it's her specialty! Quick, delicious, and fine enough for a casual
party or larger get-together on a Saturday afternoon.
| 1 can of red salmon (14.5 oz) |
1 cup bread crumbs |
| 1 clove garlic |
1 egg |
| 1/4 cup milk |
1 tsp Worcester sauce |
| 2-3 tbsp. canola oil |
1 large lemon, sliced thin |
| Parsley |

- Mince and crush garlic.
- Drain salmon and remove larger bones.
- Stir in bread crumbs and minced garlic.
- Beat together egg, milk and Worcester sauce and add to salmon
mixture.
- Form salmon into about 12 small croquettes or balls
- Sauté in hot oil until well browned on all sides.
- Serve garnished with lemon slices and parsley.
