Patti's Salmon Croquettes

      GRANNY SAYS: I personally had to persuade Patti to reveal this recipe; it's her specialty! Quick, delicious, and fine enough for a casual party or larger get-together on a Saturday afternoon.

     

1 can of red salmon (14.5 oz) 1 cup bread crumbs
1 clove garlic 1 egg
1/4 cup milk 1 tsp Worcester sauce
2-3 tbsp. canola oil 1 large lemon, sliced thin
Parsley  
  • Mince and crush garlic.
  • Drain salmon and remove larger bones.
  • Stir in bread crumbs and minced garlic.
  • Beat together egg, milk and Worcester sauce and add to salmon mixture.
  • Form salmon into about 12 small croquettes or balls
  • Sauté in hot oil until well browned on all sides.
  • Serve garnished with lemon slices and parsley.
