Picnic Potato Salad

      GRANNY SAYS: Can't do without potato salid. Yeah — you could just buy it at the deli — but you will be surprised just how easy it turns out to be to make a delicious batch from scratch!

     

1/2 cup mayonnaise 6 tbsp. white vinegar
1 small red onion, minced 4 tbsp. dill weed
1/4 cup buttermilk 1/2 tsp. salt
1/4 tsp pepper 2 zucchini, sliced thin
1 cup cooked broccoli florets 2 lbs. small white potatoes
1 cup thin sliced celery  
  • Combine mayonnaise, 2 tbsp. vinegar, onions, 3 tbsp. dill, buttermilk, salt, and pepper in a small bowl.
  • Whisk to blend, cover and chill.
  • Combine remaining vinegar, dill, and salt with zucchini and broccoli, and let marinate 2-3 hours at room temperature.
  • Peel potatoes, cut into cubes, and steam until just done.
  • Cool.
  • Drain zucchini and broccoli and combine with potatoes, celery, and mayonnaise mixture. (Serves 6)
