Picnic Potato Salad
GRANNY SAYS: Can't do
without potato salid. Yeah you could just buy it at the deli but you will be surprised just how
easy it turns out to be to make a delicious batch from scratch!
| 1/2 cup mayonnaise |
6 tbsp. white vinegar |
| 1 small red onion, minced |
4 tbsp. dill weed |
| 1/4 cup buttermilk |
1/2 tsp. salt |
| 1/4 tsp pepper |
2 zucchini, sliced thin |
| 1 cup cooked broccoli florets |
2 lbs. small white potatoes |
| 1 cup thin sliced celery |

- Combine mayonnaise, 2 tbsp. vinegar, onions, 3 tbsp. dill,
buttermilk, salt, and pepper in a small bowl.
- Whisk to blend, cover and chill.
- Combine remaining vinegar, dill, and salt with zucchini and
broccoli, and let marinate 2-3 hours at room temperature.
- Peel potatoes, cut into cubes, and steam until just done.
- Cool.
- Drain zucchini and broccoli and combine with potatoes, celery,
and mayonnaise mixture. (Serves 6)
