Winter Squash With Apple Stuffing
GRANNY SAYS: If you're
one of those people who hates squash, it's because you've never tried this recipe. True, squash is
a tad bland for some tastes, but this delicious stuffing
gives it a savor you'd lose if it were paired with a
stronger-flavored veggie. (And of course it's not just for
winter!)
| 2 acorn squash |
2 cooking apples |
| 1/2 cup chopped onion |
2 cups cottage cheese |
| 3/4 cup grated cheese |
3 tbsp. butter or margarine |
| 1/4 tsp. cinnamon |
Juice from 1 lemon |
- Split squash, remove seeds and bake, face down, on an oiled pan
at 350 degrees for 30 minutes.
- Chop onions and apples and sauté in butter until onion is
clear.
- Combine with remaining ingredients.
- When squash is done, fill with apple mix and return to oven.
- Cover and bake for 15 to 20 minutes until hot and tender.
