Winter Squash With Apple Stuffing

      GRANNY SAYS: If you're one of those people who hates squash, it's because you've never tried this recipe. True, squash is a tad bland for some tastes, but this delicious stuffing gives it a savor you'd lose if it were paired with a stronger-flavored veggie. (And of course it's not just for winter!)

     

2 acorn squash 2 cooking apples
1/2 cup chopped onion 2 cups cottage cheese
3/4 cup grated cheese 3 tbsp. butter or margarine
1/4 tsp. cinnamon Juice from 1 lemon
  • Split squash, remove seeds and bake, face down, on an oiled pan at 350 degrees for 30 minutes.
  • Chop onions and apples and sauté in butter until onion is clear.
  • Combine with remaining ingredients.
  • When squash is done, fill with apple mix and return to oven.
  • Cover and bake for 15 to 20 minutes until hot and tender.
