Gazpacho Salad

      GRANNY SAYS: Here's a spicy charmer for a side or main dish. Great stuff for hot days.

     

3 ripe tomatoes 1 medium-size red onion
1 stalk celery 1 cucumber
1 red bell pepper 1 green bell pepper
1 garlic clove, minced fine 1 large, ripe avocado
2 tsp. minced parsley 1/4 cup red wine vinegar
2 tbsp. olive oil 1/8 tsp. Tabasco sauce
1/8 tsp. each: cumin, pepper, dill, and salt  
  • For dressing, mix vinegar, oil, and Tabasco with garlic, herbs, and spices.
  • Chop up tomatoes, celery, and onions.
  • Peel cucumber and slice thin.
  • Core, seed, and chop peppers.
  • Place vegetables and parsley in a large serving bowl, mix in the dressing, and refrigerate for several hours.
  • Just before serving, peel, seed and cut up avocado and gently stir into salad.
