Gazpacho Salad
GRANNY SAYS: Here's a
spicy charmer for a side or main dish. Great stuff for hot days.
| 3 ripe tomatoes |
1 medium-size red onion |
| 1 stalk celery |
1 cucumber |
| 1 red bell pepper |
1 green bell pepper |
| 1 garlic clove, minced fine |
1 large, ripe avocado |
| 2 tsp. minced parsley |
1/4 cup red wine vinegar |
| 2 tbsp. olive oil |
1/8 tsp. Tabasco sauce |
| 1/8 tsp. each: cumin, pepper, dill, and salt |

- For dressing, mix vinegar, oil, and Tabasco with garlic, herbs,
and spices.
- Chop up tomatoes, celery, and onions.
- Peel cucumber and slice thin.
- Core, seed, and chop peppers.
- Place vegetables and parsley in a large serving bowl, mix in
the dressing, and refrigerate for several hours.
- Just before serving, peel, seed and cut up avocado and gently stir
into salad.
