Noodle Pudding With Apples
GRANNY SAYS: Do the
words "noodle" and "pudding" sound to you as if they don't belong together? Then call it something else but do
try it. Sweet though it is, you can serve it as a side dish instead
of rice or potatoes, and it's likely to become a household favorite.
In a pinch it can even double as a dessert!
| 8 oz. broad noodles, cooked |
3 tbsp. butter or margarine |
| 3 eggs, separated |
1 cup sugar |
| 1-1/2 tsp. cinnamon |
1 tsp. powdered ginger |
| 2 large green apples |
1/2 cup raisins |
| 1/2 cup sliced almonds |
1/8 tsp. salt |
- Peel, core, and cube apples.
- Melt butter in a skillet, add hot noodles and stir gently
to coat.
- Remove from heat and set aside.
- Beat egg whites until stiff. Beat egg yolks separately, slowly
adding, sugar, cinnamon, ginger, apples, raisins, and almonds.
- Gently combine noodles with sugar and spice mixture, then very
gently fold in the beaten egg whites.
- Bake in a greased glass or ceramic dish at 350 degrees for 1/2
hour or until the top is lightly browned. (Serves 6.)
