Traditional Potato Pancakes
GRANNY SAYS: Potato pancakes
are easy to make and fun to eat. When you're feeling traditional, serve them with apple sauce. But on
Saturday night when there's nobody home but you and the kids ... go
ahead just get out the ketchup bottle and let everybody snarf
'em down as if they were french fries!
| 4 large potatoes, cubed |
2 eggs |
| 1 large onion |
1/2 cup flour |
| 1/4 cup chopped parsley |
1 tsp. salt |
| 1/4 tsp. pepper |
1/4 cup cooking oil |
| 1 cup applesauce |
|
- Beat eggs until foamy.
- In a blender, combine potatoes, onion, flour, parsley, salt
and pepper and blend until well-chopped.
- Add potato mixture to eggs.
- In a saucepan, raise the oil to medium-hot heat, and drop in
generous tablespoons full of pancake mix.
- Sauté pancakes on both sides until center is done and outsides
are golden brown.
- Drain well.
