Red-hot Summer Squash
GRANNY SAYS: Yes, another
recipe for squash. For extra color, you can mix-and-match the zucchini with those cute little yellow "goose-neck"
squash. Looks pretty and cooks up in a jiffy.
| 6 zucchini squash, sliced |
1 onion, chopped |
| 2 tbsp. margarine or olive oil |
6-7 large mushrooms |
| 1 four-oz can chopped green chili |
4 fresh tomatoes, cut up |
| 1/2 tbsp. sugar |
1/2 tsp. pepper |
| 1/4 cup buttered crumbs |
Parmesan cheese to taste |
- Sauté the onion and mushrooms in margarine until the onions are clear.
- Add zucchini, tomatoes, sugar, chili, and spices and partially
cook for 1 more minute.
- Place in a quart casserole, top with crumbs and cheese and bake in
a 350 oven for 20 minutes.
- Serve hot.
