Red-hot Summer Squash

      GRANNY SAYS: Yes, another recipe for squash. For extra color, you can mix-and-match the zucchini with those cute little yellow "goose-neck" squash. Looks pretty and cooks up in a jiffy.

     

6 zucchini squash, sliced 1 onion, chopped
2 tbsp. margarine or olive oil 6-7 large mushrooms
1 four-oz can chopped green chili 4 fresh tomatoes, cut up
1/2 tbsp. sugar 1/2 tsp. pepper
1/4 cup buttered crumbs Parmesan cheese to taste
  • Sauté the onion and mushrooms in margarine until the onions are clear.
  • Add zucchini, tomatoes, sugar, chili, and spices and partially cook for 1 more minute.
  • Place in a quart casserole, top with crumbs and cheese and bake in a 350 oven for 20 minutes.
  • Serve hot.
