Curried Sweet Potatoes

      GRANNY SAYS: Here is a great way to prepare sweet potatoes and yams. Of course, to enjoy this, you do have to like curry . . . .

     

4 large sweet potatoes 1/2 tsp. salt
1/2 cup dried apricots, sliced thin 1/4 cup raisins
1/2 cup boiling water 1/2 tbsp. canola oil
1/2 medium onion, diced 1 tsp. mild curry powder
  • Bake sweet potatoes about one hour or until done and peel when cool.
  • Place apricot slices and raisins in a small bowl, pour in 1/2 cup boiling water and let stand about 10 minutes.
  • Sauté onions and curry powder in canola oil about 3 minutes, add apricots, raisins, and water.
  • Stir in sweet potato and continue to heat gently until well warmed.
  • Season with salt and pepper and serve hot.
