Curried Sweet Potatoes
GRANNY SAYS: Here is
a great way to prepare sweet potatoes and yams. Of course, to enjoy this, you do have to like curry . . . .
| 4 large sweet potatoes |
1/2 tsp. salt |
| 1/2 cup dried apricots, sliced thin |
1/4 cup raisins |
| 1/2 cup boiling water |
1/2 tbsp. canola oil |
| 1/2 medium onion, diced |
1 tsp. mild curry powder |
- Bake sweet potatoes about one hour or until done and peel when
cool.
- Place apricot slices and raisins in a small bowl, pour in 1/2 cup
boiling water and let stand about 10 minutes.
- Sauté onions and curry powder in canola oil about 3 minutes,
add apricots, raisins, and water.
- Stir in sweet potato and continue to heat gently until well warmed.
- Season with salt and pepper and serve hot.
