Sweet Potato Soufflé

      GRANNY SAYS: Tired of baked? Tired of candied? This is a great way to prepare sweet potatoes or yams! Take this sweet potato dish to the family potluck on Thanksgiving, and nobody will ask what became of the marshmallows!

     

3 pounds medium sweet potatoes 1/3 cup half-and-half cream
1/4 cup sugar 1/4 cup unsalted butter
2 large eggs 1/4 tsp. ground allspice
  • Bake the sweet potatoes until they are well cooked and very soft.
  • When potatoes have cooled slightly, peel and clean them and cut into several pieces.
  • In a blender, process cooked potatoes with cream, butter, sugar, eggs, and allspice.
  • When mixture is smooth, transfer it to a buttered 8-inch square glass baking dish with 2-inch high sides.
  • Bake in a preheated oven at 350 degrees for about 50 minutes.
  • Serve hot.
