Sweet Potato Soufflé
GRANNY SAYS: Tired of
baked? Tired of candied? This is a great way to prepare sweet potatoes or yams! Take this sweet potato dish to the
family potluck on Thanksgiving, and nobody will ask what became of
the marshmallows!
| 3 pounds medium sweet potatoes |
1/3 cup half-and-half cream |
| 1/4 cup sugar |
1/4 cup unsalted butter |
| 2 large eggs |
1/4 tsp. ground allspice |
- Bake the sweet potatoes until they are well cooked and very soft.
- When potatoes have cooled slightly, peel and clean them and cut
into several pieces.
- In a blender, process cooked potatoes with cream, butter, sugar,
eggs, and allspice.
- When mixture is smooth, transfer it to a buttered 8-inch square
glass baking dish with 2-inch high sides.
- Bake in a preheated oven at 350 degrees for about 50 minutes.
- Serve hot.
