Cornbread Casserole
GRANNY SAYS: While it's
not exactly cornbread, it's not exactly a casserole, either. But it's so good that I'll bet you could add lima
beans and other bite-sized cooked morsels, and those picky kids would
never notice anything except how much they liked it!
| 1 cup cornmeal |
1 cup flour |
| 1/4 cup sugar |
2-1/2 tsp. baking powder |
| 1/2 tsp. baking soda |
1/3 cup chopped onions |
| 1 tsp. chives |
1/3 cup chopped bell pepper |
| 1 cup corn kernels |
1-1/2 cups creamed corn |
| 2 eggs |
1 cup sour cream |
| 3/4 cup melted butter |
1/2 cup buttermilk |
- Combine the dry ingredients and add onions, chives, chopped bell
pepper, and corn kernels.
- Beat the eggs and stir in melted butter, buttermilk, sour cream,
and creamed corn.
- Combine dry and liquid ingredients.
- Bake in a greased, 9" x 13" baking dish at 350 degrees for about
50 minutes, until lightly browned and done in the center.
