Cornbread Casserole

      GRANNY SAYS: While it's not exactly cornbread, it's not exactly a casserole, either. But it's so good that I'll bet you could add lima beans and other bite-sized cooked morsels, and those picky kids would never notice anything except how much they liked it!

     

1 cup cornmeal 1 cup flour
1/4 cup sugar 2-1/2 tsp. baking powder
1/2 tsp. baking soda 1/3 cup chopped onions
1 tsp. chives 1/3 cup chopped bell pepper
1 cup corn kernels 1-1/2 cups creamed corn
2 eggs 1 cup sour cream
3/4 cup melted butter 1/2 cup buttermilk
  • Combine the dry ingredients and add onions, chives, chopped bell pepper, and corn kernels.
  • Beat the eggs and stir in melted butter, buttermilk, sour cream, and creamed corn.
  • Combine dry and liquid ingredients.
  • Bake in a greased, 9" x 13" baking dish at 350 degrees for about 50 minutes, until lightly browned and done in the center.
