Mini-scones With Raisins
GRANNY SAYS: These lumpen
little scones look like nothings, but they fly out of the kitchen as if they had wings. If you're bored with
raisins, try currents, or various kinds of nuts, or the colored,
candied fruit that goes into fruitcakes.
| 3 cups flour |
3 tbsp. sugar |
| 1 tsp. baking soda |
1/2 tsp. salt |
| 6 tbsp. unsalted butter |
1/2 cup raisins |
| 1 egg |
3/4 cup buttermilk |

Mix flour, sugar, baking soda, and salt in a large bowl.

Cut in butter until mixture is like fine meal and add raisins.

Lightly beat egg the into the buttermilk and stir into flour mixture a
little at a time to form a soft dough.

Form dough into golfball-sized balls and place on a well floured
but not greased baking sheet and bake for about 15 minutes in a
preheated 425-degree oven. (Makes about 18 scones.)
Granny adds: This recipe makes larger scones, too, but bake the large ones a little longer (about 20 minutes instead of 15), so they're properly done inside.
