Pumpkin Date Nut Loaf
GRANNY SAYS: This is
a good recipe for Hallowe'en parties. (Or Thanksgiving dinner, for that matter.) As always, you can cook up
your own pumpkin or use canned pumpkin. And of course, substitute
pecans for the almonds if you prefer them. Pecans taste richer;
almonds have a more delicate flavor.
| 1-3/4 cups flour |
1 tsp. baking powder |
| 1/2 tsp. salt |
1/2 tsp. each of nutmeg, |
| 1-1/2 cups sugar |
Cinnamon, and allspice |
| 1/2 cup oil |
2 eggs |
| 1/3 cup water |
1 cup cooked pumpkin |
| 3/4 cup chopped almonds |
1/2 cup chopped dates |

Combine dry ingredients with dates and almonds and mix well.

Beat eggs well, beat in pumpkin, then oil and water.

Slowly add dry ingredients to form a stiff dough.

Bake in 2 greased loaf pans at 350 degrees for about one hour.

Cool well before slicing and serving.
