Old-fashioned Raisin Bread
GRANNY SAYS: The scent
of raisin bread will make you nostalgic for cold autumn days and warm kitchens with kids sprawled on the floor
in the afternoon, munching warm bread while and watching TV! Note
to the cook: like many fruit and veggie loaves, this bakes up like
cake, rather than a yeast-rising bread. Always a crowd pleaser!
| 1/3 cup butter |
1 tsp. grated lemon peel |
| 2/3 cup light brown sugar |
1 tsp. baking powder |
| 2 eggs |
1/2 tsp. baking soda |
| 3 tbsp. milk |
1 cup raisins |
| 2 cups flour |
1 tsp. grated orange peel |
| 1/4 tsp. cinnamon |
1 tsp. lemon juice |
| 1/2 cup chopped pecans |

Cream together butter and sugar, add grated orange and lemon peels,
then beat in the eggs until batter is light.

Add milk and lemon juice, then dry ingredients, a little at a time, and
beat until smooth.

Fold in fruit and nuts.

Bake in a greased loaf pan at 350 degrees for about 1 hour, until
toothpick inserted in the center of the loaf comes out dry.
