Cornbread Casserole

      GRANNY SAYS: This is a great meal when you are hungry, but just not in the mood for a meaty dish! It's filling, delicious, and good for you! (Take it from Grandma! Eat your veggies if you want to be strong!) This recipe also appears in the Veggie cookbook.

     

1 cup cornmeal 1 cup flour
1/4 cup sugar 2-1/2 tsp. baking powder
1/2 tsp. baking soda 1/3 cup chopped onions
1 tsp. chives 1/3 cup chopped bell pepper
1-1/2 cups corn kernels 1-1/2 cups creamed corn
2 eggs 1 cup sour cream
3/4 cup melted butter 1/2 cup buttermilk
  • Combine dry ingredients and add onions, chives, chopped bell pepper and corn kernels.
  • Beat together eggs, melted butter, buttermilk, sour cream, and creamed corn.
  • Stir together dry and liquid ingredients.
  • Bake in a greased, 9'x 13' baking dish at 350 degrees for approximately 50 minutes, until bread is done and top is lightly browned.
