Cornbread Casserole
GRANNY SAYS: This is
a great meal when you are hungry, but just not in the mood for a meaty dish! It's filling, delicious, and good for
you! (Take it from Grandma! Eat your veggies if you want to be strong!)
This recipe also appears in the Veggie cookbook.
| 1 cup cornmeal |
1 cup flour |
| 1/4 cup sugar |
2-1/2 tsp. baking powder |
| 1/2 tsp. baking soda |
1/3 cup chopped onions |
| 1 tsp. chives |
1/3 cup chopped bell pepper |
| 1-1/2 cups corn kernels |
1-1/2 cups creamed corn |
| 2 eggs |
1 cup sour cream |
| 3/4 cup melted butter |
1/2 cup buttermilk |

Combine dry ingredients and add onions, chives, chopped bell pepper
and corn kernels.

Beat together eggs, melted butter, buttermilk, sour cream, and
creamed corn.

Stir together dry and liquid ingredients.

Bake in a greased, 9'x 13' baking dish at 350 degrees for approximately
50 minutes, until bread is done and top is lightly browned.
