Orange Pecan Muffins

      GRANNY SAYS: These muffins go well with any type of meal, and will be the first to vanish off the plate at dinner. Or, bake up muffins for a snack on a cool spring day. Kids love 'em!

     

1 cup buttermilk 1/2 cup chopped pecan
1 tbsp. grated orange rind 1-1/2 cups unbleached flour
1-1/2 cups whole wheat flour 1/3 cup brown sugar
2-1/2 tsp. baking powder 1/2 tsp. baking soda
1 tsp. cinnamon 1/2 tsp. nutmeg
1/2 tsp. mace 2 egg whites
1/4 cup corn oil 1/2 cup orange juice
  • In a small bowl, combine buttermilk, dates, and grated orange rind
  • Let mixture stand for 1 hour.
  • Combine flours, sugar, baking powder, baking soda, and spices.
  • Mix together egg whites, oil, and juice and add to flour mixture with buttermilk and pecans. Stir to combine.
  • Spoon batter into muffin cups and bake at 400 degrees for 20 to 25 minutes.
  • Makes 12 to 14 muffins.
