Orange Pecan Muffins
GRANNY SAYS: These muffins
go well with any type of meal, and will be the first to vanish off the plate at dinner. Or, bake up muffins for
a snack on a cool spring day. Kids love 'em!
| 1 cup buttermilk |
1/2 cup chopped pecan |
| 1 tbsp. grated orange rind |
1-1/2 cups unbleached flour |
| 1-1/2 cups whole wheat flour |
1/3 cup brown sugar |
| 2-1/2 tsp. baking powder |
1/2 tsp. baking soda |
| 1 tsp. cinnamon |
1/2 tsp. nutmeg |
| 1/2 tsp. mace |
2 egg whites |
| 1/4 cup corn oil |
1/2 cup orange juice |

In a small bowl, combine buttermilk, dates, and grated orange rind

Let mixture stand for 1 hour.

Combine flours, sugar, baking powder, baking soda, and spices.

Mix together egg whites, oil, and juice and add to flour mixture with
buttermilk and pecans. Stir to combine.

Spoon batter into muffin cups and bake at 400 degrees for 20 to 25
minutes.

Makes 12 to 14 muffins.
