Superfudge Cake

      GRANNY SAYS: This is absolutely the best chocolate cake of all. So if you're going to bake chocolate cake at all . . . why waste time on anything else?

     

1/2 cup butter 2-1/4 cups sifted cake flour
1-3/4 cups sugar 1-1/2 tsp. baking soda
1 tsp. salt 1 tsp. vanilla
1 cup milk 3 squares bitter chocolate
2 eggs  
  • Melt the bitter chocolate in a double boiler.
  • Meanwhile, sift the dry ingredients onto the butter in a large bowl.
  • Add vanilla and milk and beat with electric mixer for about 2 minutes on medium speed.
  • Scrape bowl well and add first the melted chocolate, then lightly beaten eggs.
  • Beat for another 2 minutes and turn into two greased 9-inch pans.
  • Bake at 350 degrees for 30 minutes.
  • When the cake is cool, frost and fill with your favorite frosting. (We think fudge frosting is best!)
