Good Little, Quick Little Scratch Cake

. On the other hand, if what you need is a good little, quick little scratch cake, this one fills the bill perfectly.
| 1 cup flour |
1/2 cup sugar |
| 1 egg |
1 tsp. baking powder |
| 1/4 tsp. salt |
1/4 cup milk |
| 3 tbsp. melted butter |
1/4 tsp. lemon extract |
| Jam |
|
- Beat the egg and add sugar while beating.
- Add flour, sifted together with the baking powder and salt.
- Then add milk, melted butter, and flavoring.
- Bake in greased, shallow pans at 350 degrees for 25 minutes.
- Frost and fill this little cake with jam and serve in a hurry.
