Orange Date Muffins
GRANNY SAYS: Muffins make
a great dessert, and a wonderful snack. Stir some up on an overcast, rainy day and see the sun come out!
| 1 cup buttermilk |
1/2 cup chopped dates |
| 1 tbsp. grated orange rind |
1-1/2 cups unbleached flour |
| 1-1/2 cups whole wheat flour |
1/3 cup brown sugar |
| 2-1/2 tsp. baking powder |
1/2 tsp. baking soda |
| 1 tsp. cinnamon |
1/2 tsp. nutmeg |
| 2 egg whites |
1/2 cup orange juice |
| 1/4 cup corn oil |

- In a small bowl, combine buttermilk, dates, and grated orange rind
and let stand for 1 hour.
- Combine flours, sugar, baking powder, baking soda, and spices.
- Mix together egg whites, oil, and juice and add to flour mixture
with buttermilk and dates. Stir to combine.
- Spoon batter into muffin cups and bake at 400 degrees for 20 to 25
minutes. (Makes 12 to 14 muffins.)
