RECIPE 86

Crispy Ginger Men

GRANNY SAYS: A classic pastry that looks too good to eat! When Cindy made these, her three-year-old Emily loved helping her to roll out the dough and press it in the ginger-man mold.

2 1/2 cups unbleached flour 1 tsp. ground ginger
3/4 tsp. baking soda 1/2 tsp. ground cinnamon
1/2 tsp. ground cloves 1/2 cup unsalted butter
1/2 cup sugar 1 large egg
1/2 cup unsulfured (light) molasses
  • Sift the dry ingredients into a medium bowl.
  • With a mixer, beat butter until light, adding sugar, molasses, and then egg.
  • Stir in dry ingredients to form a soft dough and refrigerate about 4 hours.
  • When dough is firm, cut the cookies into gingerbread-man shapes and bake at 350 degrees for about 15 minutes.
  • Decorate and serve.

Granny adds: You'll wonder if you've misread the directions when you start mashing the shortbread-cookie batter into its pan — and then — can this be right? — you cut it up like pizza! Yep, that's right, all right. These, like the ginger men in the previous recipe, are extra fun to make with children!
