Marmalade Pound Cake

      GRANNY SAYS: Pound cake is always a good way to finish off a meal. This light cake is the perfect closer for a big party, or heavy dinner.

     

1-1/2 cups unbleached flour 2 tsp. baking powder
3/4 cup sugar 1/2 cup canola or safflower oil
1 tsp. grated orange rind 1/2 cup orange juice
4 egg whites, stiffly beaten 1/4 cup tart orange marmalade
  • Combine flour, baking powder and sugar in a large bowl.
  • Add oil and juice and beat with an electric mixer until well blended. (Mixture will be thick.)
  • Add orange rind, then fold in egg whites, a little at a time.
  • Spoon batter into a greased, floured loaf pan and bake at 350 degrees for 45 minutes or until cake tester inserted into center of cake comes out clean.
  • Cool in pan for 10 minutes, then turn onto rack to cool.
  • Slice and serve garnished with orange marmalade.
