Kiwi Pie

      GRANNY SAYS: Another great pie! This is tart treat goes great with coffee or tea in the afternoon, or as a closer to a great meal! Ah! Lemonade and pie on a summer day. . .

     

3/4 cup of sugar 1/4 cup cornstarch
1/4 tsp. salt 1-2/3 cups milk
2 eggs, well beaten 1-1/4 tsp. grated lime peel
1/3 cup fresh lime juice 1 tbsp. butter or margarine
Baked pie shell, 9-inch 3 kiwi fruits
  • Combine sugar, cornstarch, and salt in a medium saucepan.
  • Mix well and gradually pour in milk.
  • Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
  • Blend a small amount of the hot mixture into the eggs and add them to the mixture in the saucepan.
  • Continue to cook over low heat for two minutes, stirring constantly.
  • Remove from heat and stir in grated peel, lime juice, and butter.
  • Pour the pie mixture into baked pie shell and chill.
  • Before serving, peel the kiwi fruits and slice to about 1/8" thick.
  • Arrange the fruit on the pie and serve.
