Kiwi Pie
GRANNY SAYS: Another great
pie! This is tart treat goes great with coffee or tea in the afternoon, or as a closer to a great meal! Ah!
Lemonade and pie on a summer day. . .
| 3/4 cup of sugar |
1/4 cup cornstarch |
| 1/4 tsp. salt |
1-2/3 cups milk |
| 2 eggs, well beaten |
1-1/4 tsp. grated lime peel |
| 1/3 cup fresh lime juice |
1 tbsp. butter or margarine |
| Baked pie shell, 9-inch |
3 kiwi fruits |
- Combine sugar, cornstarch, and salt in a medium saucepan.
- Mix well and gradually pour in milk.
- Cook over medium heat, stirring constantly, until mixture comes to
a boil and thickens.
- Blend a small amount of the hot mixture into the eggs and add them
to the mixture in the saucepan.
- Continue to cook over low heat for two minutes, stirring constantly.
- Remove from heat and stir in grated peel, lime juice, and butter.
- Pour the pie mixture into baked pie shell and chill.
- Before serving, peel the kiwi fruits and slice to about 1/8" thick.
- Arrange the fruit on the pie and serve.
