RECIPE 93

Date Bars

GRANNY SAYS: These bars are great for snacks — great on camping trips or as a treat for a school lunch. First you make the filling and then you make the crust. There now! Oops — any left? Nope. All gone for after-school snacks!

1 lb. chopped, pitted dates 1-2/3 cup brown sugar
2/3 cup orange juice 1 tbsp. vanilla extract
1-1/2 cups rolled oats 1-1/2 cups all purpose flour
1 tsp. cinnamon 1/2 tsp. baking soda
1 cup butter or margarine 1/2 cup chopped pecans
1/4 cup chopped almonds Dash of salt
Powdered sugar

      First the filling. . .

  • Stirring frequently, simmer dates, 2/3 cup brown sugar, and juice over medium heat about 3 minutes, until mixture makes a thick syrup.
  • Cool, add vanilla and puree until smooth.
And now the crust. . .
  • Mix oats, flour, salt, remaining brown sugar, cinnamon and soda.
  • Cut butter into small pieces and combine with crust ingredients until mixture is like coarse meal.
  • Spread 1/2 mixture in a buttered 13" x 9" baking dish.
  • Cover with filling and spread remaining crust over it.
  • Top with nuts and bake in 350 degree oven for about 40 minutes.
  • Cool in pan.
  • Before serving, dust with powdered sugar.
