Spicy Ginger And Almond Cookies

      GRANNY SAYS: More great cookies! These will spark up a luncheon, or fill a cookie jar (for a short, short while). Also, these cookies make great gifts — put them in a tin to take to a friend you haven't seen in a while!

     

1 3/4 cups powdered sugar 1 1/4 cups flour
1/2 cup unsalted butter 1 tbsp. peeled, minced ginger
1 tbsp. ground ginger 1/2 tsp. cinnamon
1/2 tsp. salt 1/2 cup sliced almonds
3 tbsp. whipping cream  
3 tbsp. chopped crystallized ginger  
  • Reserve about 1/4 cup sugar for garnish.
  • Combine the remaining sugar with flour, butter, fresh and powdered gingers, cinnamon, and salt until the mixture resembles coarse meal.
  • Add almonds, cream, and crystallized ginger and mix into a moist dough.
  • Shape dough into small balls and press flat to about 1/4 inch thickness.
  • Dust with remaining powdered sugar and bake in preheated, 325-degree oven for 25-30 minutes until cookies are brown at the edges.
  • Makes about 2 dozen.
