Almond Biscotti
GRANNY SAYS: These are
even better than those pricy treats in your favorite jazzy coffee house. This is also a nice family project, and
guys are invited to join the fun. (Love to eat 'em? They taste even
better if you help make them!)
| 3/4 cup almonds |
3 eggs |
| 1 tsp. vanilla |
1/4 tsp. almond extract |
| 2 cups all-purpose flour |
7/8 cup granulated sugar |
| 1 tsp. baking soda |
Small amount of salt to taste |
- Toast almonds at 350 degrees for 8-10 minutes, cool, and cut in
halves.
- Combine flour, sugar, soda, and salt.
- Separately, whisk eggs with vanilla and almond extracts, then
combine with flour mixture.
- Add almonds.
- On a greased, floured baking sheet, form two loaves about 1/2
inch high and 12 inches long.
- Bake at 300 degrees for 50 minutes or until brown.
- Cool loaves, slice into 1/2-inch slices, and toast on a baking
sheet at 275 degrees for 20 to 25 minutes, turning over once during
baking.
- Cool and store in tightly covered container.
