Oatmeal Giants

      GRANNY SAYS: These big hunky guys are always a smash. Dunk them in milk. Nibble them with tea. Big though they are, nobody ever has trouble eating a lot of them at a single sitting. (Why is that do you think?) When Patti makes these, she adds butterscotch bits along with the raisins! Try that some time. Pretty amazing!

     

3/4 cup butter 1 cup light brown sugar
1/2 cup white sugar 1 egg
1/4 cup water 3 cups uncooked oats
1 cup white flour 1/2 tsp. baking soda
1 tsp. vanilla 1/4 cup chopped almonds
1/2 tsp. cinnamon 3/4 cup raisins
1/8 tsp. salt  
  • Cream margarine with both sugars.
  • Add egg, water, and vanilla and beat until smooth.
  • Add raisins, almonds and dry ingredients and stir well.
  • With a large serving spoon, drop rounded spoonfuls on a greased baking sheet, leaving plenty of room for the cookies to spread. (Bigger dollops, bigger cookies!)
  • Bake in a preheated oven at 350 degrees for 15 to 17 minutes.
