Pumpkin Spice Cookies
GRANNY SAYS: Exotic ingredients
in the cookies make for a great change of pace. Leave your guests wondering what precisely was
in that cookie? Tell them it was pumpkin? Let them guess!
| 1 stick unsalted butter |
1/2 cup light brown sugar |
| 1/2 cup white sugar |
1 large egg |
| 2 tbsp. maple syrup |
1 cup solid pack pumpkin |
| 2 cups flour |
1 cup golden raisins |
| 1 tsp. maple extract |
1/2 tsp. each, allspice, salt |
| 1 tsp. each, grated orange peel, cinnamon, baking soda |

- Beat together butter, both sugars, egg, and maple syrup.
- Add pumpkin, orange peel, maple extract, cinnamon, and allspice
and blend well.
- In a separate bowl, mix the flour, baking soda, and salt and stir
it all into the pumpkin mixture.
- Stir in raisins.
- Drop rounded tablespoons of batter onto buttered baking
sheets and bake about 10 minutes in 350-degree preheated
oven. (Centers should be firm and edges golden brown.)
